Happy Pancake Day

If you are anything like me you don’t need an excuse to enjoy a good pancake. But seen as though it is that special day, I thought I’d share the love with a quick and easy recipe for some lovely jubbly, super yummy, fluffy American pancakes!


What you will need:
135g plain flour
*½ tsp salt
*2 tbsp sugar
*130ml milk
*1 large egg, lightly beaten
*2 tbsp melted butter or olive oil, plus extra for cooking

How to make:

  1. Sift the flour, salt and caster sugar into a large bowl. In a separate container, whisk the milk and egg together then adding in the melted butter.

  2. Pour the milk mixture into the flour mixture. Using a fork beat the mixture until the batter is smooth, this should not take too long.

  3. Heat a non-stick frying pan over a medium heat and add a knob of butter/olive oil. Once the pan is hot, add a ladle of batter (or two if your frying pan is big enough to cook two pancakes at the same time). It will seem quite thick but this is how it should look. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm (½in) thick.

  4. Repeat this process until all the batter is used up.

  5. Serve with… whatever the hell you like!

Reasons why I love pancakes:
– This recipe I got from BBC Food literally took about 30 minutes from start to finish! (Including preparation and cooking time)
2.)Easy to make – If you haven’t quite mastered the ‘flip’ of traditional pancake, then these fluffy American style pancakes may be easier for you to conquer. They are much easier to handle in the pan and less likely to go tits up.
3.)Basic ingredients – Pancakes really do not call for extravagant ingredients. In fact you can make pancakes with the stuff most of us already have lying around in the cupboard- so no stress needed!
4.)Versatile – You can go sweet or savoury? Heck you can even make protein pancakes if that’s what you are into. There is literally a pancake for everyone, so there’s no excuse not to get involved! For me I’m a sweet kinda gal. You just can’t beat a bit of nutella and loads of fruit. Mmmmm… I might make some more, it is Pancake Day after all.
5.)AM to PM – Pancakes can be enjoyed at all times of the day! Especially on Pancake Day, they could even be devoured for all three meals if you just love them that much!
